Chamber Music concerts taking place in September, the virtually
unknown beach of Gardeno and continuing our feature on
Corfiot recipes, this month why not try out Bourdeto – a spicy
Corfiot fish dish.

GARDENO BEACH


The long
sandy beach of Gardeno
is a little gem which has remained undiscovered by most. It is
missed off most tourist itineraries but loved by the locals.
It’s a great place to go if you want to get away from it all!
The beach is
located approximately 37km south west of Corfu town, 2km from
the village of Vitalades and 4km from Lefkimmi. There are a
couple of tavernas and a bar.
Chamber Music Concerts on Corfu

The Corfu Festival 'Divertimenti in Corfu ' founded in 1991 will
be hosted once again on Corfu - its seventeenth consecutive
year. The programme of concerts will begin on 23 September.
There are
six concerts – two taking place in a picturesque setting in the
grounds of the Corfu Chandris Hotel in Dasia. Other concerts
will be held in beautiful private villas - unique evenings with
an informal social atmosphere ideal for listening to chamber
music.

CORFIOT SPECIALITIES
Following
on from last month’s recipe of ‘Cockerel Pastichada’ here’s
another Corfiot specialty to enjoy…Bourdeto is a
fish dish – the fish being cooked in a tomato sauce with onion,
garlic and red spicy pepper. The best fish for Bourdeto is the
black scorpion fish; however you will also find the same dish
containing fillets of a larger kind of fish.
INGREDIENTS
(Serves 4)

1200g
Scorpion fish
(black if possible)
-
250g
olive
oil
-
4 medium sized
onions
(finely sliced)
-
spicy
red pepper
(depending on your taste)
-
1
soupspoon of tomato puree
-
lemon
juice
(optional)
-
water (enough to cover the fish)
METHOD
Heat the
olive oil in a saucepan and add the onion, red pepper, and salt.
Sauté until the onion starts to soften. Dissolve the tomato
paste in a little water and add to the pan. Continue cooking
until the onion becomes soft and translucent (about 5-8
minutes). Add the water and when it comes to a boil, add the
fish, larger in the middle and the smaller at the sides. Cover
the pot and cook over medium heat for 15 minutes. Add lemon
juice (if desired), remove from the heat, and serve.
